it depends how far you jack your car up as to how much comes out imho. i normally have to put in just over 5l to get the dipstick right. I also put a small spirit level across the top of the rocker cover (left to right) and jack the car accordingly when filling. even a couple of degrees of tilt and you will get a duff reading.
10w40 semi or fully synth.
imo if your oil has not been changed for a while, or your going from an unknown/cheap brand or its a new car to you; get yourself an extra 4-5l of carplan oil or whatevers on offer and run that through the engine after you have dropped the old oil.
i normally drop the oil. replace the sump bolt, fill it back up with the cheap new oil and go for a rag around. maybe a motorway junction or a duel carriageway. running it up to pre red line and holding it there (3rd gear ish) for a while. going up and down the rev range and stretching the engine a little.
I then come back, drop that oil after jacking the car high, replace the filter and fill up with the new, good quality oil. the bum droppings that comes out in the second flush is amazing. Its a little more expensive than using an engine flush but its a hell of a lot kinder to your engine. the new oil stays golden clean for ages as well. this can only be a good sign.

5w-30 will be fine - just with higher mileage engines most tend to use 10w-40.
