... degrease my engine head in? As in a large metal box so that I could submerge the whole head in it.
I obviously don't want it to cost a great deal. Links would be good to

I've heard that simple green degreaser I believe us quite good and safe. I have no personal usage of this though.
I've always just used a paraffin parts washer you don't really soak it though just give items a good scrubbing for 20 mins or so.
I'm sure some of the detailing guru's will be along shortly

I did consider that actually, but it's not ideal.

I think that first one will do. A head measures approximately 50x30x15cm. The second one would be quite tight corner to corner.

why not just go low tech and get a heavy duty plastic bag in a plastic crate

Because I imagine the degreaser would eat though a bag within minutes and I need to be able to turn it over without worrying about snagging
