Heater on ludes is good, should be hot, not luke warm.

Thermostat is quite easy to change on a lude, back of the cylinder head, drivers side of the inlet manifold (on h22/h23's anyway, not sure about f20's). Couple of bolts and there's a rubber seal between the housing and the block.
Just make sure your replacement is the same size as the original one...

Surely this depends on what heat setting you are on.. is your car UK or JDM? If UK, make sure the heat adjusters are actually working. If JDM, make sure heat setting is at 32 for max heat.

I might be wrong but it have nothing to do with thermostat. I would go to check what bb1boy said. There is valve mechanical(UKDM) or pneumatic(JDM), and I would blame this.

How long does the temp gauge take to get to midway (normal running temp)?

Well on a warm day not long but coldish morning about a mile driving or about 5 mins
