You are just replacing the outer boot? It is a pain in the arse. I think the way you have to do it is by removing the drive shaft.
If you unclip the inner boot from the cup that holds the bearings you can easily remove the drive shaft. Once you pull the drive shaft away the roller bearings will fall off the spider. Remove the inner boot and slide the outer boot down the drive shaft and all the way off over the inner spider. I don't think you are going to get the boot over the outer CV joint without damaging the boot.
I think that way is a lot easier than trying to separate the outer CV.

They're specific boots for stretching @Merlin, with some of them you heat them in boiling water and they become really pliable for fitting. Others just fit like these ones:
