Custom built cages cost a lot of money, well all cages cost a fair bit. Maybe you could get just a rear/half cage? Then you wont need to muck about with the dash?

Was thinking that but in the event of a head on collision or forward flip am I not more at risk of windscreen etc caving in?

The kind of roll cage you and I can afford wont do much in a front impact anyway. Even with the dash out getting a bar to go from one side of the car to the other under the dash is very difficult. Near impossible in a road car due to the heater, airbag bits etc... I do not have a front bar under the dash on my cage. But... You do have a big engine to soak up front impacts
A rear cage would still have the main hoop and that would give you most of your rollover protection. If you did have a full cage the rollover protection would be supplemented with a diagonal bar from the main hoop to the horizontal bar above the windscreen.
