About ten years ago my landlady alleged I was a car trader, due to me having six cars parked out front! Ended up showing her my accounts, which had no car-related stuff, and she apologised grumpily. Basically she didn't care whether I was or I wasn't, it was the 'eyesore' (in her view) of lots of old Rover V8 cars parked outside that she didn't like.
In your case, I suggest you politely but firmly deny that you're in the trade, and explain you're a hobbyist/collector and you break cars for parts - which is of course perfectly within your rights to do. But as one of your neighbours must have complained to the council about it being an eyesore, you might like to throw the council a bone and promise to cover up some the cars or dispose of one, or something like that. Just so they can go back to the complainant and say they've got a result - which should shut the neighbour(s) up...
If you get all angry and hostile about it, then the council might try to push it further and attempt a prosecution for 'change of use' or suchlike. This would be a lot of hassle for both parties and a waste of time for everyone, so it might be better to go 'softly softly'.
