Disconnect the IACV and bridge service connector, then start the engine, if problem has gone then you've found the cause!
Mine was the same when I went to put it back on the road and did the above, idle stopped bouncing, but warm idle was up around 900rpm which is too high. Adjusted base idle down to around 600rpm, reconnected IACV and problem solved, so it could just be your idle speed is out and the IACV is trying to compensate but can't, so is why it's bouncing.
