Google "Colourlock". You basically clean it with solvent, re-dye the worn areas with the appropriate colour. I used black F034 on my knobs & F046 on my seats & steering wheel. (I think!) & finally apply a protector. It's not too shiny, either.
I got mine from Petzoldt's in Germany.
BTW, you can just re-touch the wear-prone bits now & again.

Yeah, I was really looking for a leather treatment/restorer, that is also coloured so that it 'fills in' the scuffs, a bit like colour waxes you get for the car itself.
