Ok,
THIS is the most basic explanation I can find on offset. Only started reading up on it myself a few weeks ago; and turns out it's pretty simple.
I think your only concerns with a lower offset are wheel diameter & width - because the wheel will stick out more. And similarly with a higher offset such as ET45, the wheel will sit further in.
So with a lower offset like ET25, the wheels are going to sit under the arches & look sick!

But if they are too big or wide, they'll rub like a badman over anything that slightly resembles a bump.
I'm
guessing that if you went no larger than 16" 7.5J, you'll probably be alright with that offset. But it's difficult to say for sure without trying. Also depends on how high or low your suspension rides I suppose.
Tbh, ET25-45 is only 2cm difference. So I can't see it being a major issue.
The good news is, hub bore is 56.1.

So you can accommodate those wheels using some small spigot rings.
What size & width are the wheels you're looking at?
