Depends what wheels you go from and to. 2-3kgs per wheel isn't outrageous, frees up some rotating mass too

25kgs is a huge amount to lose in 1 place & especially at the highest point above the CofG

I have so far removed all plastic trim & carpet, rear bench (& metal frame), pax airbag, aircon, cruise, rear wiper, aerial, spare wheel & jack & various odd bits & have lost just over 50kgs from our uk 4g

Losing the sunroof is a must for a track car (if fitted  )

Yup it's a 4ws- but not for long!

More weight savings to add losing the 4ws ECU & going over to a 2ws subframe

If we manage to lose the sunroof I reckon 100kgs total isn't far out of reach- & that's without getting serious. with it ;)

It's already made a noticeable difference- really can't wait to get it back out on track now

100kg is easly achievable, drive it with a largish passenger, then pull over and kick-em out, drive it again. its amazing how much difference it makes :D other areas are bonnet, boot lid (the std spoiler alone is around 6kg) wheels could be a good area (are the steel wheels any lighter?) even just sheding 2.5kg from each wheel would be an extra 10kg  all the glass is real heavy too. then there is the battery, if its a track car can a smaller battery be used, i had a fair few track bikes years ago (its too painfull falling off now as im older  so i dont do this anymore  ) but i always removed the battery and set the electrics up to run without the battery and just start it with a seperate battery (on my bikes i just bump start, not so easy on a car) but there may be some rules on this now, what with all the health and safety crap around maybe something to do with being able to restart the car should you leave the track maybe :? but there are loads of electrical items and wires that can be shed 8-)
