Brake fluid looks nice and clean, and I can't feel any fluid under the servo.. Doesn't mean it isnt there, just means my fingers aren't long enough!

When was the last time you had the brake fluid changed?

If it's old the boiling point may have dropped to a point where the heat from braking is causing it to boil (gas comprses = no/little braking)

Had this happen on an old Astra on a twisty back road with 5 up.

Most garages should be able to check the boiling point for very little (I think I paid £5 for it to be tested)

I'll check it out before I buy a new MC..

This happened in the old wagon I had.
A rear caliper had seized causing the fliud to boil up and my foot went to the floor, after a few pumps of the pedal the brakes returned. (crapped myself though as I was tanking it down the country A roads at the time)
So I pulled over at the nearest place (pub :D ) for an hour and let it cool. was enough for it to get me back home without problems

So check all your calipers and make sure none are seized on

It sounds like you could do with a brake overhaul. New master cyclinder, fluid, caliper clean up. The calipers/carriers generally need a bit of love every year or so, im sorting my 5G's next week (I have a sticking rear caliper :().
