Injector pulse will be too quick for a multimeter, you'd need an oscilloscope to measure that.
Unless (having said that without looking at the wiring diagram) the injectors have a permanent +ve rail and are switched on the ground, meaning you could measure the +ve rail accurately.
You wouldn't know how effective the ground was via the ECU though, so still wouldn't know exactly what voltage was being dropped over the injector when it fired.
