I'm fairly sure the LED has a built in resistor.

Could it be the switch I'm using? There are 3 connectors on it and I'm only using 2 of them.
The other connector has an earth symbol on it. It's an illuminated switch, but I don't need the illumination.

There was no mention of it being an LED that included any resistance built in/what type of LED it was.
So yeah, if the LED has an in-built resistor (of the right range), then that's ok.

Did it come with any specs that says how much voltage it drops?

Should I have a wire directly to the LED from the 3rd terminal?
