if you pour water onto the roof should it run behind the seal like this?

Yep, think so. Otherwise the water can't get out of the roof gutters?

I still haven't got round to refitting the gutter trims on mine (3 years after it was resprayed lol) so just been out and taken a couple of pics looking back along the gutter;
